Stone Ground Corn Flour

Stone Ground Corn Flour is made by the milling or grinding of dried whole kernel corn. It is much finer than corn meal and is used a lot in the South with fried foods such as deer meat, fish and seafood (fish fry, batters for shrimp, oysters, onion rings, etc.). Another favorite of the South that is made from corn flour and cornmeal is corn muffins.

For people who are allergic to gluten (a protein formed when wheat flour is made into a batter) corn flour is a great alternative. Corn flour can be used by it self or can be mixed with other flours for many recipes to reduce gluten.

Corn flour also has more dietary fiber and adds a wonderful flavor to many recipes.
